Fanuidhol is the grey peak in the group of three that dwarves and elves both used as a landmark for Khazad-dûm. Caradhras is the red one to the south, Celebdil the white one in the middle, and Fanuidhol stands north of them, above the Dimrill Dale.
The three names come up together whenever Moria is described, because between and beneath these mountains lie the halls of the dwarf-realm. Gimli names all three in Sindarin, in Khuzdul and in the common speech when the Fellowship first sees them from the western side, which is one of the very few places where Tolkien gives dwarf-names for landscape features.
Nothing in the narrative happens on Fanuidhol itself. It functions on the map as a marker: when you see Cloudyhead, Silvertine and Redhorn together, you are looking at the roof of Moria.
